RECIPE: BUCKWHEAT PANCAKES WITH BROCCOLI AND GOAT CHEESE

Try these buckwheat pancakes! Simple, healthy and easy. The pancakes are delicious for after a workout, ideal as a bread substitute and you can freeze them!

BUCKWHEAT PANCAKES

BASIC RECIPE
NEED (Batter for 10 to 12 pancakes)
~ 3 eggs
~ 250 grams of buckwheat flour
~ 600 ml of coconut rice milk
~ Butter or coconut oil for baking

TO DO
Beat the eggs lightly in a bowl. Add the flour and milk and stir everything into a smooth batter. Heat a spoon of coconut oil or a lump of butter in a frying pan until it is hot. Spoon some of the batter into the pan and gently move the pan so that the batter runs evenly over the bottom. Bake the pancake until the bottom is golden brown and the top is just dry. Turn it and bake the other side golden brown. Bake all the pancakes this way.

BUCKWHEAT PANCAKES WITH BROCCOLI AND GOAT CHEESE

NEED (For 2 servings)
~ 2 buckwheat pancakes (see recipe)
~ 200 g of cooked broccoli
~ 100 g goat cheese in cubes
~ hand pumpkin seeds
~ optional: dash of olive oil

TO DO
Bake the buckwheat pancakes according to the recipe. Cover the pancakes with the broccoli, goat cheese and pumpkin seeds. Drizzle with olive oil and if necessary season with pepper and salt.
