Recipe - Vegetarian Soto Soup

A delicious vegetarian soto soup with a lot of cozy trays on the table! Everyone puts together their own bowl of soup. Children love this! Do you want to add something or change the ingredients, everything is possible! Enjoy this fun meal!

Preparation time: 1 hour



Ingredients for 4 persons:

~ 4 cloves of garlic

~ 5 cm fresh ginger

~ 1-2 stems of chilled sereh lemongrass

~ 320 gr vegetarian chicken pieces

~ 2 liters of tap water

~ 2 vegetable stock tablets

~ 200 gr silver rice

~ 4 medium eggs

~ 400 gr green beans

~ 40 gr fresh celery

~ 125 gr bean sprouts

~ 100 gr fried onions



  1. Crush the garlic cloves. Peel the ginger and cut into coarse pieces. Cut the lemongrass stem into pieces as well.
  2. Pour the water into a large saucepan and add the garlic, ginger, lemongrass and stock tablet. Bring to a boil and cook at low heat for 45 minutes with the lid on the pan. Season to taste with salt and pepper.
  3. Make the vegetarian chicken pieces a little smaller by pulling/picking them apart.
  4. Strain the broth to remove all garlic, ginger and lemongrass and add the vegetarian chicken. Simmer for another 15 minutes with the lid on the pan.
  5. Cook the rice according to the instructions on the package. Cook the green beans until al dente and boil the eggs hard for about 8 minutes, then shock and peel them.
  6. Put everything on the table in separate bowls and fill your plate with whatever you like!
  7. For example, put some rice, green beans, celery, bean sprouts and an egg in each soup plate. Then pour the hot broth with vega chicken pieces on top. Finish the soup with the fried onions on top.


Variation tip: Do you like a little spice? Then add some sambal for an extra spicy touch.
