INGREDIENTS (For 10-12 brownies)
~ 200g dates, seeded
~ 1 courgette
~ 1 banana
~ 100g almonds
~ 2 eggs
~ 60g whey protein (chocolate flavour)
~ 2 tbsp raw cocoa powder
~ 1 tbsp ground cinnamon
~ 2 tsp baking powder
~ 75 g walnuts
- Preheat the oven to 180 degrees. Put the dates in a measuring cup and pour boiling water over it until they are covered.
- Puree the remaining ingredients, except the walnuts, in a food processor to a smooth batter. Finally add 50 grams of walnuts so that they are not completely ground. Divide the batter evenly in the baking dish.
- Place the baking dish in the middle of the oven and bake the brownies for about 25 minutes until golden brown and done. Remove the brownies from the oven, let the cake cool slightly.
- Drain the moisture from the dates, mash the dates in a food processor until you have a smooth, creamy sauce. Divide the sauce over the brownies. Chop coarsely and sprinkle on top.
