Recipe: Vegetarian Paella

We can all do our part for the environment by reducing our meat consumption. Maybe you´re a vegetarian already or a 'flexitarian'. Either way some inspiration can always help to try something new! Scroll down below for this yummy vegetarian paella. Get INSPIRED!

NEED (for 2 people)
~ 200 g snow peas
~ 1 red pepper
~ 1 onion
~ 1 vegetable stock cube
~ some saffron threads
~ 2 tbsp olive oil
~ 2 tsp paprika powder
~ 100 g green peas
~ 150 g paella rice

1. Clean the snow peas. Cut the pepper into strips and chop the onion. Make the stock with 500 ml water, the stock cube and the saffron.
2. Heat the oil in the pan, fry the onion on a medium heat for 5 minutes. Add the paprika powder and fry briefly. Add the rice, stir regularly and fry until the grains are glassy. Scoop the snow peas, bell pepper, and peas through the rice and fry briefly.
3. Pour the broth, while stirring, with the rice and bring to a boil. Stir well and simmer over low heat for about 20 minutes.
