RECIPE : TURKEY SATAY WITH MANGO AVOCADO DIP

Even though the mango season is later this year, you can still find lovely juicy mangoes in your local veg store today. Grab one and make this easy recipe!


COOKING TIME: 25 minutes


For 2 servings you need:
~ 125 g turkey fillet
~ 1 tbsp soy sauce
~ 1 tbsp olive oil
~ 1 mango
~ 1 ripe avocado
~ Juice of 1⁄2 lime
~ Optional: 1⁄2 red pepper
~ 1 tsp paprika powder
~ 1 clove of garlic
~ 1 tbsp olive oil


TO DO
1. Cut the turkey fillet into strips and sprinkle with salt and pepper. Mix the soy sauce and
olive oil in a bowl, spoon in the turkey strips and leave to marinate for 10 minutes.
2. Peel the mango and avocado, remove the seeds and cut into pieces. Mix the lime juice
with the pieces of mango and avocado.
3. Mash the red pepper, paprika, garlic and olive oil to a smooth dip with the hand blender.
Season the salsa with a little salt.
4. Heat a grill pan over high heat. Thread the turkey strips on the skewers.
5. Turn the heat to medium and roast the turkey sate on golden brown in 5 minutes. Serve
the turkey sate with the dip and vegetables of your choice.
